Food: Seared Tuna and Noodles
So one of my favorite things to do is go to this Asian market called H-Mart and spend hours there trying new food, buying spices and oils that are not at my local grocer, and checking out the fresh fish and veggies section which is always amazing. I don’t usually have a plan for what I am buying (I probably should) but it is really an adventure. So this week I purchases a random mix of goodies:
Daiei Undon (noodles)
Toasted Sesame oil
Nori (seaweed wrappers)
Goya coconut milk
Thai red curry paste
Fresh Vegetable chips (actually veggies sliced and crispy fried like zucchini, carrot, sweet potato so good)
Crystallized sea salt
2 fresh tuna steaks
Homemade seaweed salad
I felt like a contestant on that show Chopped and I wanted to find a cool way to use all the ingredients plus a few more to make a great dinner. So this is what I called East meets East because two different styles of Asian cuisine on the same plate: Seared Tuna with Red curry Undon noodles. Enjoy!
Red Curry Undon:
1 tablespoon of sesame oil
1 can of coconut milk
1 tablespoon of red curry paste
2.5 servings of Undon noodles
Heat your wok up with the sesame oil on the bottom, shake your can of coconut milk and then pour into the wok, then add your curry paste and wisk till all the ingredients have married. Get a good boil on it and then let simmer. In a separate pot get some water boiling for your noodles, let cook for 3minutes and then strain and rinse with cold water. Add the noodles to the curry broth.
Tuna spice rub:
Nori (seaweed wrapper)
Vegatable Chips
1/3 tablespoon of salt
1/2 tablespoon of pepper
½ table spoon of thyme
½ tablespoon of garlic powder
Mix all of these in the food processor or blender till they are finely mixed together and set aside. Next take a frying pan and put a tablespoon of sesame oil in it, place over the fire and let the pan get really hot. Now take your Tuna steaks and dip each side into the seaweed mixture and place in the hot pan for 45secs on each side.
Asian Aioli sauce:
2 tablespoons of mayonnaise
¾ tablespoon of sesame oil
A splash of white wine (loosen up the mixture)
1 tablespoon of the remaining seaweed rub from the tuna
Wisk all of these ingredients together and drizzle this deliciousness lol over the sliced tuna.
Take your noodles and tuna and plate, add your seaweed salad and choose a nice pair of chop stick and grab someone you like and enjoy!
