Food: Vegan Oatmeal Raisin Cookie

Its been a minute but I am back! I have been busy traveling, moving and living lol essentially making more content to put on Paparoxi. Today I thought I would share one of my FAVORITE cookie recipes. It is important to stick to your goals and limit the sugar in your diet. However, from time to time I believe in a little indulgence so here is my version of being bad.

3/4 Cup of Vegan Margarine

1 cup packed Brown Sugar

1 teaspoon of Vanilla

1/2 cup of Soymilk (or non dairy milk)

1 cup of flour

1/2 teaspoon of Baking soda

1/3 teaspoon of Sea Salt

1 teaspoon of Cinnamon

1 cup finely chopped Walnuts

1 cup Raisins

1/2 of crystallized whole Sugar (or grade b maple syrup)

3 cups of rolled quick oats

1) Preheat oven to 350 degrees

2) Beat together the sugar, brown sugar and vanilla until smooth and fluffy. Add the soy milk and mix. Add the flour, baking soda, salt and spices stir until well mixed. Add the remaining ingredients and batter will be very thick.

3) Form 3 inch balls onto cookie sheet and flatten slightly. Bake for 12 to 15 minutes.

 

These are delicious but still high in sugar, so practice restraint while eating them. Also you can sub out the extra cup of white sugar for grade B maple syrup. Make the cookies and let me know what you think! Happy Eating.
